Introduction
Creamy, tangy, and just the right amount of spicy, Tirokafteri is a bold Greek feta dip made for sharing. Salty feta is blended with sweet roasted red peppers, garlic, chili, and a splash of red wine vinegar for a delicious combination of smoky, fresh, and spicy flavors. Serve it with warm pita, grilled bread, or crunchy vegetables for an easy Mediterranean-style appetizer.
Ingredients
- 10 ounces Greek feta cheese, broken into chunks, plus extra for garnish
- 1 red chili pepper or jalapeño, trimmed and roughly chopped
- 2 small roasted red bell peppers, torn into pieces (or 1 12-ounce jar fire-roasted red peppers, drained)
- 1 small garlic clove, chopped
- 1 tablespoon red wine vinegar
- About 2 tablespoons extra virgin olive oil, plus more for serving
- 2 tablespoons fresh parsley, finely chopped, for garnish
- 4–5 Kalamata olives, pitted and chopped, for garnish
- ½ French baguette, for serving (optional; pita chips or fresh vegetables also work well)
Instructions
- Make the dip: Add the feta, chili pepper, roasted red peppers, garlic, and red wine vinegar to a food processor. Blend briefly until the ingredients begin to break down.
- Add the olive oil: With the food processor running on low, slowly drizzle in about 2 tablespoons of olive oil and continue blending until smooth and creamy.
- Toast the bread: If serving with baguette, slice it diagonally into ½-inch pieces. Brush both sides lightly with olive oil and grill on a griddle or grill pan over medium heat for 2–5 minutes, flipping until lightly charred on both sides.
- Garnish: Spread the Tirokafteri onto a serving plate or shallow bowl. Drizzle with a little olive oil and top with crumbled feta, chopped parsley, and Kalamata olives.
- Serve: Enjoy immediately with grilled bread, pita chips, or fresh vegetables.
Notes
- Adjust the heat: Keep the chili seeds for a spicier dip or remove them for a milder version.
- Choose good feta: A high-quality Greek feta packed in brine gives the dip a creamier texture and richer flavor.
- Make ahead: Prepare the dip in advance without the garnish and store it in a sealed container in the refrigerator for 2–3 days. Garnish just before serving.
- Serving idea: Tirokafteri is also delicious alongside grilled meats or used as a spread for sandwiches and roasted vegetables.
