Savory Feta, Tomato, and Basil Tart

Ingredients:

  • 6 eggs
  • 17.7 oz ricotta cheese
  • 7 oz feta cheese, crumbled
  • 1 bunch fresh basil, chopped
  • 8 oz cherry tomatoes, halved

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the eggs, ricotta, feta, and half of the chopped basil. Mix well using an electric mixer or a spoon until smooth and well incorporated.
  3. Pour the mixture into a 9-inch glass or ceramic pie pan.
  4. Arrange the halved cherry tomatoes evenly over the top.
  5. Bake for about 1 hour, or until the center is set and begins to puff up.
  6. Remove from the oven and let cool for about 15 minutes, or until just warm.
  7. Sprinkle the remaining chopped basil over the top before serving.

Tip: This tart is just as tasty served cold — a perfect option for warm summer days.
