Introduction

There’s nothing quite like a stack of warm, fluffy pancakes to start the morning. With a simple technique—beating the egg whites and folding them into the batter—you can create pancakes that are thick, light, and wonderfully airy. Easy to make and perfect with butter, maple syrup, and fresh fruit, this recipe is sure to become a breakfast favorite.

Ingredients

  • 1½ cups all-purpose flour
  • 3 tablespoons confectioners’ sugar (or regular sugar)
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 large egg yolk
  • 2 egg whites
  • 1⅓ cups milk
  • 2 tablespoons butter, melted and cooled
  • 2 teaspoons vanilla extract

Instructions

  1. Mix the dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
  2. Prepare the wet ingredients: In a separate bowl, whisk the egg yolk, milk, vanilla, and melted butter until combined.
  3. Combine the batter: Add the dry ingredients to the wet ingredients and stir just until combined. It’s fine if a few lumps remain.
  4. Let the batter rest: Allow the batter to rest for at least 10 minutes (15 minutes if possible). This helps create fluffier pancakes.
  5. Beat the egg whites: While the batter rests, beat the egg whites with a mixer on medium-high speed until stiff peaks form, about 3–5 minutes.
  6. Fold the egg whites: Gently fold the beaten egg whites into the batter just before cooking.
  7. Cook the pancakes: Heat a lightly greased griddle or skillet over medium heat. Pour about ⅓ cup batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. Serve: Serve warm with butter and a generous drizzle of maple syrup.

Notes

  • Storage: Allow pancakes to cool completely before storing. Keep them in an airtight container in the refrigerator for up to 5–6 days.
  • Freezing: Place cooled pancakes in a freezer-safe bag or container (with parchment between layers) and freeze for up to 3 months. Reheat in the microwave for 1–2 minutes.
  • Flour tip: Stir the flour in its container before measuring, then spoon it into the measuring cup and level it with a knife. Scooping directly from the container can add extra flour and affect texture.
  • Butter substitute: You can use canola oil instead of butter if desired, though butter gives the pancakes richer flavor.

Final Thought

Light, tender, and irresistibly fluffy, these pancakes turn an ordinary morning into a cozy breakfast worth savoring. 🥞🍁
