Introduction

These flavorful Eggplant Meatballs are a delicious vegetarian twist on an Italian classic. Roasted eggplant and red pepper give them a satisfying, almost meaty texture, while Parmesan, sun-dried tomatoes, garlic, and Italian herbs add plenty of savory flavor. Serve them with marinara and pasta for a comforting meal, or enjoy them on their own as a tasty appetizer. 

Ingredients

  • 1 red bell pepper, roasted (or use jarred roasted peppers)
  • 2 small eggplants, peeled and cut into ½-inch cubes (about 17–18 oz / 475–500 g)
  • 2 tablespoons extra-virgin olive oil
  • 4 sun-dried tomato halves, very finely chopped (about 1 oz / 25 g)
  • 1 cup Panko breadcrumbs (60 g)
  • ½ cup freshly grated Parmesan cheese (45 g)
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon flour (chickpea flour works well)
  • Coarse sea salt and freshly ground black pepper, to taste

For serving:

  • Marinara or your favorite tomato sauce
  • Fresh chopped parsley, optional
  • Cooked spaghetti or other pasta of choice, optional 

Instructions

  1. Roast the pepper: Preheat oven to 450°F (230°C). Cut the pepper in half and remove the stem, seeds, and membranes. Place cut-side down on a baking sheet and roast for about 20 minutes, until the skin is blackened and wrinkled. Let cool slightly, peel away the skin, chop, and set aside.
  2. Roast the eggplant: Reduce oven temperature to 425°F (220°C). Arrange the cubed eggplant on a parchment-lined baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 25 minutes, tossing once after 15–20 minutes, until golden and caramelized around the edges.
  3. Prepare the mixture: Reduce oven temperature to 375°F (190°C). In a large bowl, combine the roasted pepper and eggplant with the sun-dried tomatoes, Panko, Parmesan, garlic, Italian seasoning, flour, salt, and pepper.
  4. Mix gently: Work everything together with your hands until well combined, while keeping some texture. If the mixture feels too sticky, add a little more flour or Panko.
  5. Shape the meatballs: Form the mixture into 12 meatballs and arrange them on a parchment-lined baking sheet.
  6. Bake: Bake for about 20 minutes, or until the meatballs are firm and lightly browned.
  7. Serve: Carefully remove from the baking sheet and serve warm with tomato sauce, fresh parsley, and pasta, if desired. 

Notes

  • For the best texture: Smaller eggplants tend to have fewer seeds and can be less bitter than larger ones.
  • Keep some texture: Avoid overmixing the ingredients—the mixture should retain a texture similar to ground meat rather than becoming a purée.
  • Using jarred peppers: If your roasted peppers are packed in oil, you may need a little extra flour or Panko to keep the mixture firm.
  • Vegan option: Substitute the Parmesan with a vegan Parmesan alternative.
  • Storage: Keep leftovers covered in the refrigerator for several days. They can also be enjoyed cold.
